The devil has robbed our people of the knowledge of self, God, and our historical ways of life, free from the complications of disease and illness. The African-American must make a practical connection to his ancestral past. If he suffers from sickle cell anemia, the foods of his ancestors may save his life.
Back to Our Roots: Food for the Gods! contains recipes chosen because they can be easily integrated into the African-American lifestyle. Many of the anti-sickling foods are root and sprout vegetables.
We are not proposing a cure. Sickle cell anemia is a hereditary disease; however, if significant amounts of these foods can prevent the red blood cells from sickling, then we are further along the road to having this crisis under control. The same foods will also prevent the development of hypertension, diabetes, and some life-threatening cancers.
With the help of Almighty God, The Most High, The Highest, we are praying that this approach may be of some service and value.
ABOUT THE AUTHOR
Chef Dawud R. Ujamaa, a certified working chef, has been a chef and food-service manager for thirty years. In addition to hosting The Cooking Man Show on Atlanta, Georgia, cable television for seven seasons, he has served as chef at many prestigious establishments, including Radisson hotels in Atlanta, Georgia, and Raleigh, North Carolina; the Best Western in Doraville, Georgia; and the Sheraton in Durham, North Carolina, to name only a few.
